  2. Coat bottom a baking pan with melted butter or olive oil.
  3. Rinse fish, pat dry, and lay the fish flat into the pan.
  4. Spread the Boursin cheese spread (or any preferred cheese spread) on top of fish.
  5. Open can of tomatoes and pour out most of the access juices.
  6. Pour diced tomatoes and a little bit of juice on top of the fish.
  7. Sprinkle salt (and other seasonings you prefer to use) and parmesan on top of fish.
