What a delicious fall breakfast idea to make this holiday season! Carefully flip the pancakes and let them cook for a minute or two longer, until golden brown and cooked through. Repeat that process until all of the batter is gone. Since the pancakes freeze well, I usually make a double batch on the weekend so the kids can just pop them in the toaster on busy mornings throughout the week.

Light and fluffy with crisp edges, these pumpkin pancakes have a lovely fall flavor — perfect with a hot cup of coffee on a cool morning! These pumpkin spice pancakes are everything you look for in a pancake — light and fluffy with crisp edges, plenty of flavor and easy to make. They aren't your typical pancake and I attribute it to the creamy addition of the pumpkin pie spice coffee creamer made by International Delight®. I was messing with spices and packaged pancake batter mix. So I took the batter mix and added nutmeg, cinnamon, clove, and brown sugar.
