  1. Pour about ΒΌ cup of wine vinegar in to a cup or ramekin. Add the salt and sugar then stir well to dissolve. Drop in the peppercorns and allspice berries.
  2. Cut the onion into 6mm (approx. ΒΌ inch) slices.
