- Pour about ΒΌ cup of wine vinegar in to a cup or ramekin. Add the salt and sugar then stir well to dissolve. Drop in the peppercorns and allspice berries.
- Cut the onion into 6mm (approx. ΒΌ inch) slices.

- Scald off a jar of at least 500ml (1 pint) and add the onion. Pour in the sugar, vinegar, peppercorns, and salt mixture.
