- Melt your butter, over boiling water or in the microwave/oven. If you're melting it in the oven/microwave, don't use high heat for long else you might have a butter explosion โ.
- Sift and whisk the dry ingredients, and set aside.
- To the buttermilk, add vanilla and egg and whisk till the egg breaks up. Then add the melted butter and mix.
- Add the liquid ingredients to the dry mixture and stir till it's just combined. DON'T OVER-MIX, else you'll be left with bread-like pancakes. And we want FLUFFY! ๐.
- Heat up your pan and put about 1 tsp of butter till its melted.
- Using a scoop of your choice, pour in the pancake batter and fry..
- You won't get the traditional bubbles on the top as an indicator that it's ready (cause of the buttermilk), so keep an eye on it and flip to check. Also, flip with care to avoid flattening out the pancakes. Don't toss them to flip and don't press.
