Ingredients of Crab Bisque

  1. What You needis 1 of no Crab shells & legs.
  2. What You needis 30 grams of Onion roughly chopped.
  3. It's 30 grams of Celery roughly chopped.
  4. What You needis 30 grams of Carrot roughly chopped.
  5. It's 2 tsp of Tomato puree.
  6. What You needis 1 pinch of Thyme.
  7. It's 1 sprig of Parsley stems.
  8. What You needis 1 of no Bay leaves.
  9. It's of few seeds Black peppercorns.
  10. It's 50 grams of Crab meat (removed from claws).
  11. What You needis 1 tsp of Refined oil.
  12. What You needis 1 of no Onion, sliced.
  13. What You needis 30 mls of Brandy.
  14. What You needis 2 cups of Shell fish stock / plain water.
  15. It's 1 tsp of Raw rice.
  16. It's 1 tsp of Tomato puree.
  17. Lets Go Prepare 20 mls of Cooking cream.
  18. It's to taste of Seasonings.
  19. What You needis to taste of Cayenne pepper / Chilli powder.

Crab Bisque step by step

  1. Break the claws & legs from a whole crab & reserve them for cooking & garnish as well..
  2. Separate the meat from the body & claws, wash the body & keep aside.
  3. Cover the reserved legs & claws in a stock pot with & let it simmer.
  4. Remove the froth, reduce the heat, add rest of the ingredients & simmer for 30 minutes.
  5. In a saucepan, heat oil, cook sliced onion till transparennt for 5 minutes.
  6. Remove from heat, let it cool, once the liquid is cool enough, blend it to a smooth paste.
  7. Now simmer the soup, add chilli powder, seasonings & cream..
  8. Do not let the soup boil, just simmer till it is ready for serving..
  9. Decorate the soup with cooked claw, crab meat & finely chopped parsley..
